Yields: 4 Servings


Ingredients

1 pound boned and skinned chicken breast halves
3/4 cup Wholewheat Breadcrumbs
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons prepared horseradish
1 tablespoon dijon mustard
1/4 cup white wine


 
Instructions
Preheat oven to 350F.

Cut meat into 4 portions.

On a plate mix together the bread crumbs, salt and pepper. In a bowl stir together the horseradish, mustard and wine.

Dip chicken in the horseradish mixture until well coated. You can marinade for up to 1 hour for a stronger flavor.

Roll the chicken in the breadcrumbs to coat evenly. Place pieces in a casserole (not glass). Don't let the pieces touch.

Bake uncovered for 25-30 minutes, until firm to the touch.
